Ingredients
8 fl oz OPTIFAST 800® Ready to Drink, any flavor
1 package sugar-free, fat-free pudding mix, any flavor
Preparation
1. Combine pudding mix and OPTIFAST 800® Ready to Drink in a mixing bowl. Mix with wire whip or electric mixer for 1 - 2 minutes or until thick.
2. Portion into four dessert dishes and refrigerate until ready to serve. Cover any leftover servings and keep refrigerated for up to 3 days.

Preparation

PEANUTTY SNACK BITES
Easy to prepare and simple to store, these nutritious snacks are a handy treat.
Ingredients
1 - 1.48 oz packet OPTIFAST 800® Vanilla Powder
½ cup reduced-fat, all-natural creamy peanut butter
⅓ cup skim milk
½ tsp vanilla extract
1 packet no calorie sweetener
½ cup quick oats
½ cup all-natural granola or high protein cereal
¼ cup semi- sweet chocolate chips
Preparation
1. Line cookie sheet or large plate with waxed paper or plastic wrap.
2. Combine peanut butter, OPTIFAST 800® Vanilla Powder, milk, vanilla extract and sweetener in a mixing bowl; stir well.
3. Add oats, granola or cereal and chocolate chips; stir to combine ingredients.
4. Using a cookie scoop or teaspoon, portion mixture into balls and place on prepared cookie sheet. Store in tightly covered container in refrigerator.
Note: Cereal/granola may become soggy over time.

BLACK FOREST COOKIES
A lighter, but no less flavorful, version of a bakery favorite.
Ingredients
1 - 1.48 oz packet OPTIFAST 800® Chocolate Powder
1 package Sweet n Low® Sugar-Free Chocolate Cake Mix
1 cup light cherry pie filling
Preparation
1. Preheat oven to 350°F.
2. Combine all ingredients in a mixing bowl. Stir until all dry ingredients are blended in and mixture is cohesive and moist.
3. Drop by rounded teaspoon onto cookie sheet sprayed lightly with nonstick cooking spray.
4. Bake for 12 minutes or until cookies spring back when touched.
5. Cool on pan for 2-3 minutes; then remove from cookie sheet and allow to cool completely before placing in an airtight container or zip top bag for storage.
(Cookies may become moist and sticky over time.)

KEY LIME DESSERT
Try this Florida classic with vanilla or cheesecake flavor pudding mix for two distinctly nutritious tastes.
Ingredients
1 ½ tsp sugar-free lime gelatin mix
½ cup boiling water
2 Tbsp lime juice (use key lime juice for authentic flavor)
¼ cup cold water
8 fl oz OPTIFAST 800® Ready to Drink French Vanilla
1 package sugar-free, fat-free pudding mix, vanilla or cheesecake flavor
4 tsp graham cracker crumbs
8 tsp fat-free, non-dairy whipped topping
Preparation
1. Combine gelatin mix, boiling water and lime juice in a bowl; stir until dissolved. Add cold water and stir.
2. Add OPTIFAST 800® French Vanilla and pudding mix to gelatin. Mix with wire whip for 1 - 2 minutes or until pudding mix is dissolved and mixture starts to thicken.
3. Pour into individual dessert dishes or custard cups. Cover and chill for 2 hours.
4. Prior to serving, sprinkle 1 tsp graham crackers crumbs on top of each serving. Garnish with a dollop of fat-free whipped topping.

Ingredients
1 – 1.53 oz packet OPTIFAST 800® Chicken Soup Mix
15 oz can garbanzo beans, rinsed and drained
2 Tbsp olive oil
2 Tbsp lemon juice
¼ tsp cumin
½ tsp minced dried onion
Dash of white pepper
Preparation
1. Place garbanzo beans in a food processor or blender and process until smooth. Add OPTIFAST 800® Chicken Soup Mix, cumin, onion and lemon juice and process again until blended (scrape down sides as needed).
2. While processor or blender is running, slowly pour the olive oil into the bean mixture. Continue processing until oil is blended in.
Makes 1 cup hummus (8 – 2 Tbsp servings)

Preparation

3. Seal and shake for 1 minute or until crackers are thoroughly coated with the soup mix.
4. Spread crackers evenly onto cookie sheet. Bake for 5-7 minutes. Cool and enjoy!
Leftover crackers can be stored in a re-sealable storage bag for up to 2 days.
